Morning Peach Melba

I used this recipe to get in some protein at breakfast time when I was a vegetarian. Low-fat cottage cheese provides about 14 grams of protein per half cup. I would not recommend fat-free cottage cheese, as I find it to be a bit too bland.

Prep Time: 10 minutes

Ingredients:

  • ½ cup low-fat cottage cheese
  • ½ cup canned peaches in juice
  • 1 Tbsp. strawberry preserves
  • 1 slice raisin bread

Preparation:

  • Toast bread.
  • Spread preserves over bread.
  • Top with cottage cheese.
  • Drain peaches, and place fruit on top of cottage cheese.

    Nutrition Data: 275 calories; 2.5 grams of fat
