A Day at the Beach: My Daily Review of The South Beach Diet (Day 3)

Day Three

I made a modified South Beach Diet recipe for lunch. The original recipe is called Crab Cobb Salad and it's appropriate for all Phases of the diet. You can find it at the SBD online site and in the book.

I tossed up some mixed greens including two different kinds of lettuce, some spinach, and some broccoli, with some olive oil vinaigrette dressing.

The recipe asks for canned crabmeat, but I had someLouis Kemp Crab Delights on hand so I shredded some and tossed in. I added some chopped tomatoes and the 1/4 cup of blue cheese the recipe called for. Verdict? Yum!

I have a night class on Tuesdays so I grabbed a cinnamon creme meal replacement bar on the way out the door.

The bar reminds me of crisped rice cereal with a sweet cinnamon glaze. The bottom layer is a yummy creme frosting that tastes like vanilla icing, only less sweet.

The only con I would point out is that the bar is quite dry. You will definitely want a tall glass of ice water on-hand when you eat this bar.

Day three and my carb cravings are still very persistent. I know they'll subside soon -- as promised -- but I really, really want some pretzels right now. Hmmm ... I'll down my daily serving of nuts and see if that does the trick. Until tomorrow!
