A fool is somewhere between a pudding and a parfait. This recipe is very tasty, especially if you're a coconut fan like me.
Prep Time: 25 minutes
Ingredients:
- 1/2 c. sweetened, shredded dried coconut
- 2 pints strawberries, chopped into fourths
- 2 medium bananas
- 1 tsp. orange extract
- 1 c. low-fat plain yogurt
- 1 Tbsp. light brown sugar
Preparation:
In a large bowl, mix fruit together. Fold in yogurt, sugar, and extract. Fold in about 6 Tbsp. of the coconut. Divide evenly among four serving dishes. Sprinkle remaining coconut over the top of each.Note: Toasting the coconut before preparing will greatly enhance its flavor. Orange extract can be decreased or increased slightly according to taste.
