If you are making the transition from a high-fat diet to a low-fat one, you have probably found yourself feeling a little overwhelmed by the major changes you're facing. When we stop to consider the high-fat diets most Americans are accustomed to, it only stands to reason that the sacrifices involved with going low-fat are not very easy to get used to. No matter how good our intentions are -- losing weight, getting healthier, lowering our cholesterol -- making the transition just doesn't come easily for most of us.
So, what makes it so tough? Well, the truth is, we like the taste of fat and the feeling of fullness that eating it brings. As creatures of habit, we miss that taste and feeling when we do without it, especially very early on in our weight loss efforts. A breakfast that used to be a sausage biscuit is now Egg Beaters and fresh fruit; lunch is grilled chicken and steamed veggies instead of a fast food burger. You may feel a little cheated or deprived. In fact, you're probably downright hungry
And just when you've surmounted one obstacle, you find another. No bones about it, going low-fat changes your life. You have to change to way you shop, the restaurants you visit, the way you prepare foods and the portion sizes you consume. You also have to cut down how often and how much of your favorite higher-fat foods like ice cream or fried chicken you eat. The challenge lies in facing your new way of eating as an opportunity. You are choosing good, nutritional foods for better health in lieu of higher-fat fare that pleases your taste buds significantly more.
When you hit that moment of truth in the first few weeks, you just might tell yourself that the sacrifices are too great. Most newbie low-fat dieters go through this period of self-doubt. We've had to bid farewell to our favorite comfort foods as they transform into occasional treats rather than staples. We've had to change our bad habits, like stopping for fast food on the way home. Who likes change? No one likes giving up something they love. Because of this period of adjustment, we may even become depressed about the sacrifices we are making, even though it's "just food."
Are you ready for the good news? It can be summed up in three little words: It will pass. A new study from the National Cancer Institute shows that, in the long run, adjusting to a low-fat, high-fiber diet isn't as hard to swallow as it seems.
