Dessert Doldrums
If you've been reading my previous installments, you'll know that I've had a little bit of trouble finding many NutriSystem desserts/snacks that suit me. So, I've decided to take matters into my own hands and modify some of the foods to my own taste.
Today, I'll share with you how I modified the vanilla pudding that I previously thought of as bland into a special treat!

Voila!: Almond Creme Pudding
First of all, I toasted 1 1/2 teaspoons of slivered almonds (you're allowed almonds as a fat serving):
I sprayed my toaster oven baking sheet with cooking spray and spread the almonds in an even layer. I toasted them for a few minutes, pulling the pan out every so often to flip and shake them. (You don't have to toast them, but it really brings out their flavor if you do.)
Next, I prepared the NutriSystem Vanilla Pudding as directed on the package.
Then I added a teaspoon of almond extract. I though it still tasted a little plain ... so in a very adventurous effort (for me at least), I poured more directly from the bottle. Result? It tasted like creamy almond nougat!
Next, I topped the pudding with some fat-free whipped topping. Lastly, I sprinkled on my toasted slivered almonds ... yum, yum, yum!
BTW, if you want to try my idea, you could even use different flavored extracts like lemon extract. Hmmm ... lemon creme pudding ... perhaps I'll try that next! ;-)
