Toss a Smarter Salad

Monday September 10, 2007
Still making that salad with bland iceberg lettuce? Toss out that ho-hum head of green and switch for darker greens such as spinach or romaine. Not only are they more flavorful, they pack more nutrients such as folate and vitamin A.

While you're tossing out instead of tossing your salad, go ahead and chuck the egg salad. Hard boiled eggs and beans are a much better choice for topping it off without the added fat that the mayo in egg salad packs in.

If you like "extras" on your salad, say so-long to fried noodles and croutons and top your greens with sunflower seeds and walnuts -- they're better for you, with vitamins and healthy fat as an added plus.
